How To Make Chola Puri And Malpura

Ingredients:
For Making Chola:
- 1 Cup Chole
- 1 Boiled & Mashed Potato
- 1 Green Chilly
- 3 Tomatoes
- 1 Pinch Baking Soda
- 2 Cup Water
- 1 Tsp Red Chilly Powder
- 1 Tsp Chola Masala
- 1/4 Turmeric Powder
- Salt To Taste
- 1/2 Tsp Coriander Powder
- 2 Tsp Curd
- 1/4 Tsp Roasted Cumin Seeds
- 1 Tsp Tea Leaves
- 2 To 3 Cloves
- 3 To 4 Bay Leaves
- 10 Gm Tamarind Soaked In 1/2 Cup Water
- 1 Tsp Oil
For Making Puri :
- 2 Cup Wheat Flour
- Salt To Taste
- Water For Making Dough
- 2 Cup Oil
For Making Pressure Cooker Halwa:
- 1 Cup Wheat Flour
- 1 Cup Ghee
- 1 Cardamom
- 2 Cup Water
For Malpura:
- 1 Cup Wheat Flour
- 1/2 Cup Milk
- 4 Tsp Sugar
- 1/2 Tsp Cardamon Powder
- 1 Cup Oil For Frying Malpura
Garnishing For Malpura:
- Rabri
Garnishing For Chola:
- Fresh Coriander Leaves
- Lemon Slice
Method :
For Making Chola:
1. First Of All, Take 1 Cup Chola And Soak Chole In Water For 4 To 5 Hours , After 4 To 5 Hours Take A Pressure Cooker And Add Soaked Chole, 2 Cup Water, 1 Pinch Baking Soda,After Adding The Above Ingredients, Add Smooth Cloth Bag Which Contains 1 Tsp Tea Leaves And 3 To 4 Cloves In The Bag, After Adding Tea Leaves And Cloves Close The Smooth Cloth Bag
And Smooth Cloth Bag Is Ready, Now You Can Add This Bag In The Pressure Cooker As It Is, (This Bag Gives The Fine Color To Chola) Then After Adding The Ingredients ,Close The Pressure Cooker Lid And Cook It Till 2 Whistle.
2. After 2 Whistle, Take A Blender Jar And Add 1 Green Chilly And 3 Tomatoes And Blend It And Make A Smooth Pure.After Making Tomatoes And Green Chilly Pure,Take A Pan Add 1 Tsp Oil And Heat It.Once Oil Gets Hot Add 1/4 Tsp Roasted Cumin Seeds, 3 To 4 Bay Leaves And Cook It For 2 to 3 Minutes, After 2 Minutes Add Tomatoes And Green Pure In The Pan And Cook This Pure
Till It Become Light Golden Color.
3. When The Tomatoes Pure Become Light Golden Color, Add 2 Tsp Curd, 1 Tsp Red Chilly Powder, 1 Tsp Chola Masala, 1/4 Turmeric Powder, Salt To Taste, 1/2 Tsp Coriander Powder In The Pan And Mix It Well.
4. After Mixing All The Above Ingredients, Add 1 Cup Boiled Chole (Which We Already Boiled Above) And 1 Boiled & Mashed Potato. And Cook It For 10 Minutes In Low Flame Of Gas , After 10 Minutes Add 1 Cup Water, 10 Gm Tamarind Water (Which Already Soaked In 1/2 Cup Water) In The Pan And Cook It For 5 Minutes In Low Flame Of Gas.After Adding Tamarind Water In The Chole Again Cook It For 2 To 3 Boil.After 2 To 3 Boils Off The Gas Flame And Chole Is Ready To Serve. Serve The Chole In Serving Plate For Garnishing.
For Making Puri :
1. Take A Bowl Add 2 Cup Wheat Flour, Salt To Taste, Water And Mix It And Make A Tight Dough, After Making Tight Dough Make A Small Balls On This Dough And Roll It And Make A Small Puri Shape.
2. After Making Small Puri Shape, Take A Pan Add 2 Cup Oil And Heat It. Once Oil Gets Hot Fry The Puries One By One From Both The Sides Till The Puries Become Golden Color. When The Puries Become Golden Color, Take Out The Puries In To Tissue Paper To Remove Excess Oil After Removing Excess Oil In The Puri , Puri Is Ready To Serve With Chola.
For Making Pressure Cooker Halwa:
1. Take A Pressure Cooker And Add 1 Cup Ghee And Heat It. Once Ghee Gets Hot Add 1 Cardamom, 1 Cup Wheat Flour Cook This Wheat Flour Till Wheat Flour Become Golden Color. After Wheat Flour Becomes Golden Color Add 2 Cup Water And Mix It Well After Mixing Properly, Cook The Sheera For 5 Minutes In Slow Flame Of Gas. After 5 Minutes, Off Gas Flame And Sheera Is Ready To Serve.
Serving And Garnishing:
Garnish The Chola Puri With Coriander Leaves, Onion And Lemon Slice And Now, Serve The Chola Puri With Halwa..
For Making Malpura:
1. First Of All, Take A Bowl And Add 1/2 Cup Milk And 4 Tsp Sugar, After Adding Milk And Sugar Mix It Till Sugar Properly Dissolve In Milk And After Sugar Properly Dissolve, Add 1 Cup Wheat Flour And 1/2 Tsp Cardamon Powder In The Bowl Slowly Slowly And Make A Thin Paste. After Making A Thin Paste Of Wheat Flour Take A Pan And Add 1 Cup Oil And Heat It, Once Oil
Gets Hot Take A Small Spoon And Add 1 Tsp Paste In The Spoon And Pour It In The Heated Oil, And Do Like This And Made One By One Malpura’s And Cook It Till Both Sides Of Malpura Become Dark Brown Color. After Malpura’s Become Dark Brown Color Take Out Malpura In The Tissue Paper To Remove Excess Oil In Malpura. After Removing Excess Malpura Is Ready To
Eat With Rabri.
Serving Of Malpura:
Serve The Malpura With Rabri, Or You Can Also Spread The Rabri In The Malpura Amd Then Eat, Its Up To You.
