How To Make Mango Pickle
Cooking Time : 30 Minutes
Ingredients :
- 1 Kg Green Mango
- 250 Gm Salt
- 6 Tsp Red Chilly Powder
- 2 Tsp Turmeric Powder
- 8 Tsp Fennel ( Saunf )
- 250 Gm Yellow Chana Dal
- 6 Tsp Fenugreek Seeds ( Methi Dana )
- 6 Tsp Mustard Seeds
- 4 Tsp Black Cardamom
- 5 Clove
- 1 Tsp Asafoetida
- 2 Tsp Kalongi ( Nigella Seeds )
- 2 Tsp Black Pepper
- 1/2 Kg Mustard Oil
Method :
1. Take 1 Kg Green Mango And Cut In To Pieces And Peel Its Seeds And Add 50 Gm Salt Then After Adding Salt, Mix It Well And Rest It For 3 To 4 Hours.
2. Then Wash The Green Mango In 2 To 3 Times In Normal Water , Then Drain All The Water From Green Mango And Leave It For 1/2 Hour.
3. Then Take A Pan Add 1 Kg Mustard Oil And Heat It Well Once Oil Gets Hot Add 1 Tsp Aforesaid, 4 Tsp Black Cardamom, 5 Clove, 2 Tsp Black Pepper Then Off The Gas Flame And Cool Down This Mixture.
4. Then Take A Blender Jar And Add 8 Tsp Fennel, 6 Tsp Fenugreek Seeds, 6 Tsp Mustard Seeds Blend It.
5. Now, Take A Bowl And Add 1 Kg Green Mango, 200 Gm Salt, 6 Tsp Red Chilly Powder, 2 Tsp Turmeric Powder And Fennel Mixture, 2 Tsp Kalongi ( Nigella Seeds ). Mix It Well.
6. Then Again Take A Pan And Roast 250 Gm Yellow Chana Dal For 2 - 5 Minutes In Low Flame Of Gas.
7. Then Add Oil In The Mixture Of Whole Green Mango And Also Add Roasted Chana Dal Along With Mixture And Dip In To The Oil, Then Pour This Green Mango In To Glass Jar And Cover This Jar In Muslin Cloth.
Note : Keep This Mango Pickle In Sunlight For 8 To 10 Days And Daily Move This Mango Pickle In The Glass Jar.
8. After 8 To 10 Days, Mango Pickle Is Ready To Eat.
